Enter the following codes at the Cheat Menu. It's important to note that once you use the "Unlock All Maps" cheat it can not be turned off without deleting the save information from your hard drive/memory card.

Infinite Ammo: UnleashHell
Unlock All Maps: GiveMeTheMaps
Unlock Evolution Game: GiveMeItAll
